Soup Anyone?

Winter = cold weather = soup. Soup warms the soul, warms the body, and even seems to warm the house while it’s cooking! To that end, we thought we’d share a split pea soup recipe that had our office chatting this week… enjoy, we hope you like it!


1.5 Cup Dried Split Peas

Ham Bone

soup1 Cup Cubed Ham

1 Chopped Onion

3 Tablespoons Butter

2 Tablespoons Flour

2 Cups Milk (We Use Skim)

Salt & Pepper To Taste

Soak the peas for 24 hours in enough water to cover them. After soaking, add enough water to the soaked peas to make 2.5 quarts total. Put the peas and liquid into a large soup pot with the chopped onion and ham bone. Bring to a boil, reduce heat and simmer partly covered for 1.5-2 hours, or until the peas are soft. Remove the ham bone and strain the soup mixture into a bowl. Puree the strained mixture in a blender. In the soup pot melt the butter, then stir in the flour and gradually whisk in the milk to make a smooth sauce which will thicken. Stir the pureed soup mixture back into the pot, add cubed pieces of ham and season to taste with salt and pepper. Mmmmmm!
