Simple Summer Salad

Now that it’s practically summer, we thought we’d share one of our favorite summer salad recipes. It’s easy to make with just a few ingredients, and it’s amazing. Enjoy!
Tarragon Chicken Salad
2-3 chicken breasts, grilled and shredded
1 lb. box bowtie or large seashell pasta
Tarragon – approx. 2 tablespoons dried
Mayonnaise to taste
Prepare the chicken, if you’re in a hurry you can use an oven stuffer roaster and shred it, but the grilled flavor adds to the overall taste of the salad if you have the time. Shred the chicken. Cook the pasta. When pasta has been drained and cooled, add the shredded chicken, mayonnaise to taste and the tarragon. Depending on how much you like tarragon, you might want to add a little more to add to the taste. You can also add a little ground black pepper. Chill so the flavors can blend, then serve. If you like, you can add some finely diced celery or maybe even a little diced sweet onion.
